Mexi-Cali Toast

Ingredients (Serves 2)

2 slices of rustic bread (sourdough or bolillo)
La Costeña Refried Black Beans
2 fried eggs
La Costeña pickled jalapeños
1 ripe avocado
1 small lime, juiced
1 tbsp finely chopped red onion
1 tbsp chopped fresh cilantro
Salt, pepper, onion powder, and garlic powder to taste
Crumbled cotija or queso fresco

Preparation Steps

  1. Toast the bread until golden and crisp.
  2. Prepare the avocado topping:
    – Mash avocado in a bowl.
    – Mix in lime juice, red onion, cilantro, salt, onion powder, garlic powder, and pepper. Adjust seasoning to taste.
  3. Fry the eggs.
  4. Assemble the toast:
    – Spread a thin layer of warm refried beans.
    – Spoon the avocado mixture generously on top.
  5. Add toppings:
    – Place the fried egg on top.
    – Add pickled jalapeños and crumbled cotija or queso fresco.
  6. Serve immediately with a wedge of lime on the side.
