Ingredients (Serves 2)
2 slices of rustic bread (sourdough or bolillo)
La Costeña Refried Black Beans
2 fried eggs
La Costeña pickled jalapeños
1 ripe avocado
1 small lime, juiced
1 tbsp finely chopped red onion
1 tbsp chopped fresh cilantro
Salt, pepper, onion powder, and garlic powder to taste
Crumbled cotija or queso fresco
Preparation Steps
- Toast the bread until golden and crisp.
- Prepare the avocado topping:
– Mash avocado in a bowl.
– Mix in lime juice, red onion, cilantro, salt, onion powder, garlic powder, and pepper. Adjust seasoning to taste. - Fry the eggs.
- Assemble the toast:
– Spread a thin layer of warm refried beans.
– Spoon the avocado mixture generously on top. - Add toppings:
– Place the fried egg on top.
– Add pickled jalapeños and crumbled cotija or queso fresco. - Serve immediately with a wedge of lime on the side.
