4 slices rustic bread (sourdough or bolillo)
1 can La Costeña® Refried Black Beans
4 fried eggs
1 ripe avocado
1 small lime, juiced
1 tbsp finely chopped red onion
1 tbsp chopped fresh cilantro
1/2 cup La Costeña® Pickled Jalapeños, sliced
Crumbled cotija or queso fresco, to taste
Salt, pepper, onion powder, and garlic powder, to taste
Directions
1) Toast the bread until golden and crisp.
2) Mash avocado; mix with lime juice, red onion, cilantro; season to taste.
3) Fry eggs (sunny-side-up or desired doneness).
4) Assemble: spread warm refried beans on toast, add avocado mixture, top with a fried egg, pickled jalapeños, and cotija.
