Tinga De Pollo
Delicious chicken breast, Onions, Tomatoes, Costena Jalapeños, Cilantro, Garlic, and spices
Instructions
Start by washing and patting dry 4 large chicken breast, cut off any extra fat or extra trimmings so your left with lean breast meat. Boil for 20 minutes on high or until the chicken is completely cooked through. While your chicken is cooking you can prep your vegetables clean and dry your tomatoes, onions and cilantro, cut the inion and tomatoes into thin slices. Peel and dice 2-3 garlic into small pieces.
Open 1 small can Costeña Jalapenos and dice them into strips.
Remove your chicken and allow to cool completely before shredding. In a separate pan heat some cooking oil of your preference, add the diced garlic ,allow the garlic to get aromatic and then add your shredded chicken breast allow the garlic and chicken to sauté for about 2 minutes to incorporate the flavor then add 2 packs of either sazon or two cubes of knor chicken bouillon flavoring.
Add one cup of water. Allow to cook for 5 minutes then add all of your other ingredients the tomatoes, cilantro, costeña jalapeños. And onions, and salt and pepper to taste.
Allow all the flavors to incorporate for another 10 minutes covered up, and then enjoy with fresh tortillas, or rice and beans. This is a family favorite. If you dont use all of your chicken you can save it to use as the stuffing in fried taquitos another day.
